Thanks for this diagram, as it appears that I've been tying it wrong for 25 years. Having said that, what's the difference in actual operation? I think that between the two setups shown, the "wrong" version would make it more difficult to access and untie the bowline if needed, as it would be hidde...

Ahh, ok. I assume you mean tack when you said clew, yes? While it's probably not ideal to put slightly more outward force on that last sail car than the luff normally does when the sail is fully raised, I don't think it's necessarily a problem. You shouldn’t see it, because whoever stepped the mast should have cleaned up the excess. But yeah, it should be there.
