My Camber Spar never hits the mast but often, when the breeze is strong, the stay will not stay in the grooved roller. This makes the jib hard to lower and requires a trip to the bow to set things straight. Anyone know how to cure this?

Sounds like the keeper is too large or deformed , allowing the stay
to slip off the sheave and jam. The keeper should be a tight slip
fit around the sheave. You can press it in a vise, or buy a new one.
Another possibility is that the keeper is correct but the stay slips
into the gap created by the cheeks that hold the sheave. You can
either fabricate a stop or go to a larger head stay.

This is only a wild guess, but it could be as simple as the forestay being a bit too loose. If you haul your jib tight by the luff, you’re camber spar sheave could have marginal contact with the forestay. Another possibility I guess could be the clew end not being hauled out tight enough, if in fact you have the capability of adjusting it (I can on mine). Like I said, this is a guess—hope it helps.
