I’ve got a leak in one of the coolant hoses going from the engine to
the hot water heater. Since this will be a pain to replace and I
never use the hot water does anyone know if it would be acceptable to
either 1) plug up the outlet and inlet on the engine or 2) short
circuit the outlet to the inlet on the engine?

DO not plug it. Short circuit it. I am
assuming yours is like my engine cooling system. The HW heater loop is just an
extension of the water flow. So if there is no HW heater the hose goes from the
outlet on the engine to the inlet. On freshwater cooled engines there are two
inlets and outlets for the seawater and freshwater loops (unless the freshwater
is internally plumbed). I have a yanmar 3gm seawater cooled model that was
aftermarket converted to freshwater cooled by Freedom when built (so the heat
exchanger is a sendure mounted externally and the hose connections are
confusing.
I just replaced the hoses to my HW heater
and it was an easy job but maybe your access is worse then mine.
