I have had only one such experience and it was after installing a folding prop. The prop was too large and resulted in all the symptoms you cite.

F32 Overheat
The three major indications of wrong pitch/diameter propeller are
Overpithed/size
black smoke at higher RPM,s and not achieving rated RPM at wide open throttle.
Underptich/size
achieve rated RPM, but unable to reach expected speed.
Overheat is usually a sea-water flow problem, restriction of piping, clogged filter, degradation of sea-water pump, or restrictions in the heat exchanger. Also, on the Yanmar GM series, the exhaust elbow, being cast iron, rusts and scales, blocking the exhaust.
Much more rarely, fresh water system has a problem, pump fail, low water or other problem.
If you have used the recommended pitch/diameter from PYI, those numbers worked on my F32 Dolphin, some years back.

I have recently added a maxprop to my f32. on our
second trip out on saturday to Block Island our engine
started to act up and eventually cut out. I check the
engine all was well so I started it up and ran it slow
but it eventually cut out.
My question is wheither the maxprop was set to high
for the engine or? any ideas would be appreciated.
