i’m about to buy a freddom 28/30 (u.k.–version) ketch (centerboard–version).
never sailed a ketch before.
i wonder if you always have to have the mizzen–sail up (when – and when not?) – or if you’re also be able to sail without it (when – under which circumstances?)?

I have a Freedom 28 CK with WB booms and wrap around sails. I solo sail a lot in the winter in winds above 10 knots. I usually sail main only due to the difficulty in getting both sails down in 10 Knot winds without someone to keep the boat pointed into the wind. Raven is not as balanced with main only but she sails fine.

I have a F33 CK/CB with wishbone booms. I sail all the time with just the Main she sails just fine. In fact With the cat ketch design Freedom recommends sail reduction as follows. Reef mizzen, mizzen full down, reef main, main full down, hold on tight. She does not sail with the mizzen only, you can’t maintain a heading.
