I’m placing my order in a week or so and I am going with Haarstick.
Plus Haarstick has been making these sails since the inception. $500.00
difference is worth the piece of mind that it is going to be done correctly
the first time.
I know other makers can do a very good job, but utilizing the maker of sails
the factory used when boats were commissioned is reassuring to me.

Sairite will sell you the kit OR build it for you! It was no 2100 -
and the sail is built in the USA. I know, I contacted them and had
them add all the Freedom 21’s sails to their list so I could get a
price!.
Their database is currently offline - but I think the main,
complete and finished, with battens and everything was 8-900. Jib
was maybe 300

You might want to look on baconsails.com. Some Freedom 25’s can
use a Melges 24 main.
